The NVQ Level 2 in Food Preparation and Cooking is ideal for anyone who prepares food as part of their job role. It includes three core units which focus on general issues, such as health and safety and team working. The learner can then select from a range of optional units, each focusing on a particular area of food preparation and cookery. Throughout, the programme includes step-by-step instructions for preparing, cooking and finishing a range of different foods, together with handy tips for effective working.
To achieve the qualification, learners will need to complete all of the following mandatory units:
They will then need to complete eleven optional units. Each unit contains tasks and activities designed to cover the specific learning outcomes.
Candidates plan a programme of development and assessment with their assessor. Assessment is based on a claim of competent performance in the workplace against the national standards.
The candidate will be required to produce a portfolio, which includes evidence of everyday tasks being observed by an assessor or expert witness from the workplace, together with reflective accounts to analyse personal performance and identify opportunity for change and improvement. In addition, question and answer, professional discussion and projects can all be used to provide further evidence.
This NVQ also requires the candidate to complete a set of underpinning knowledge question sets. The learning materials are designed to support this process, including delivering underpinning knowledge and the building of the portfolio of evidence, but they do not replace the need to construct a portfolio of evidence.
Units achieved through this qualification will support the NVQ in Hospitality, which learners may wish to progress to having successfully achieved this qualification, or work towards other qualifications in the catering and hospitality sector.
